Herb Rubbed Lamb Chop
8 lamb loin chops, cut 1 inch thick
1 teaspoon paprika
1/2 teaspoon dried thyme, crushed
1/2 teaspoon dried basil, crushed
1/4 teaspoon coarsely ground pepper
1/8 teaspoon ground cumin
1/4 teaspoon salt
1) For rub, stir together all ingredients and rub on to both sides of the chops.
2) Grill lamb chops over a medium coals to desired doneness, turning once halfway through.
Allow 10-14 minutes for medium rare.

Chicken Garlic Sauté
6 boneless, skinless, chicken breast
1/2 cup flour
2 Tablespoons olive oil
4 Tablespoons small diced onions
5 Garlic cloves chopped
1/2 cup dry white wine
1 Tablespoon lemon juice
1 Cup chopped tomatoes
1/2 cup chicken stock
2 teaspoons crushed basil
1) Dredge chicken breast in flour and sauté in olive oil, browning them. Remove from the pan and finish cooking the breast in a 375-degree oven.
2) Add the onions and garlic and sauté until the onions are translucent.
3) Deglaze the pan with the white wine and lemon juice. Then add the tomatoes, chicken stock and crushed basil. Simmer for 8-10 minutes.
4) Serve and enjoy.

Cheddar and Basil Biscuits
2 cups less 2 tablespoons unbleached flour
1/2 cup whole wheat flour
1/2 teaspoon salt
2 teaspoons baking powder
6 tablespoons butter
2 tablespoons tomato paste
1 minced garlic clove
2/3 finely grated sharp cheddar cheese
1 tablespoon crushed basil
1) Preheat oven to 400 degrees. Combine the first four ingredients then cut in the butter.
2) In another bowl combine milk, tomato paste and garlic, mixing well.
3) Combine the dry ingredients with the liquid ingredients and the basil and cheese. Mix to form soft dough.
4) Place the dough on a lightly floured counter. Knead gently and roll out to 1/2 thickness. Cut dough into desired shapes and place on an ungreased baking sheet.
5) Bake 15 to 18 min or until lightly golden brown.

Stuffed Peppers with Basil
1 pound lean ground beef
2 large onions chopped
1 garlic clove, minced
2 tsp. crushed basil
2 tsp. chili powder
2 cups tomato paste
1/4 cup beef broth
2 tablespoons sugar
1 tablespoon soy sauce
1/4 cup milk
1/2 pound sharp cheddar cheese, grated
1 1/4 cups cooked rice
1-tablespoon parsley flakes
8 green bell peppers
1) Bring a large pot of water to boil. In a skillet brown the beef.
2) Add the basil, chili powder, garlic parsley, salt and pepper to taste. In a bowl combine tomato paste, beef broth, sugar, soy sauce and milk. Then add to the skillet, stirring well.
3) Simmer for 10 minutes. Over low heat stir in the cheese until it has melted. Remove from heat, add the rice and let cool.
4) Cut the peppers lengthwise and remove all seeds and pith. Drop the peppers into boiling water for approximately 3 min. Drain and cool.
5) Fill the peppers equally with the stuffing and bake in a shallow baking dish at 400 degrees for 30 minutes.
Easy Tomato-Basil Sauce
2 1/2 tablespoons crushed basil
1/2 cup red wine or water
3 tablespoons extra-virgin olive oil
2 diced shallots
3 garlic cloves, minced
1 6oz. can tomato paste
1 pound dried pasta
Parmesan cheese
1) In a large pot bring water to a boil and cook pasta. Meanwhile, In a skillet, heat olive oil over med-high heat.
2) Sauté shallots until they are translucent. Stir in tomato paste and garlic. Cook for one min. Deglaze the pan with the red wine and add basil. Simmer until pasta is finished.
3) Reserve 1/2 cup of the pasta water and add it to the sauce. Toss sauce with pasta and garnish with Parmesan.

Garlic Basil Foccacia
1 1/8 cups luke warm water
1 tablespoon olive oil
1 tablespoon sugar
1/2 teaspoon salt
3 cup bread four
1 1/2 teaspoon fast acting yeast
2 cloves garlic minced
1/2 tablespoon crushed basil
Kosher salt
Hand-made method:
Combine all dry ingredients (except garlic, basil and kosher salt) in a large bowl. With a spoon stir in water and oil until mixing becomes too difficult. Transfer the dough to a lightly floured surface. Shape the dough into a ball and knead for 8 to 10 min. Place the dough in a large greased bowl and cover with a kitchen towel. Let the dough rise for 45 to 55 min, or until it has doubled in size.
Food processor or heavy duty mixer method:
Combine all the dry ingredients (except garlic, basil and kosher salt) in the food processor or mixer and process for 8-10 Seconds. If using a mixer use the dough hook. Pour water and olive oil into the work bowl and process until the dough forms a ball. Process 1 minutes for a food processor and about 5 minutes with a mixer. Place dough in a lightly greased bowl, cover with a kitchen towel, and let the dough rise 45 to 55 minutes or until it has doubled in size.
1) Preheat oven to 400 degrees.
2) Grease a baking sheet with olive oil.
3) After the dough has risen once, rollout out to a 10 inch round or square shape. Place the dough on the baking sheet. Cover the dough with the kitchen towel and let it rise again. Aprox. 30 minutes.
4) Brush the surface of the dough with olive oil or spray with water. Using your fingertips, press the garlic into the dough and sprinkle with basil and salt.
5) Bake at 400 degrees for 20 minutes or until golden.
